First Look at Kin Shop, Harold Dieterle’s New Thai Spot

Perilla chef-owner Harold Dieterle has never made a secret of his passion for Thai food — one he’ll be able to explore fully at Kin Shop, his second restaurant with partner Alicia Nosenzo, which opens on Monday. But don’t expect your typical mix and match choice of chicken, beef, shrimp, or tofu; Mr. Top Chef Season One decides which sauce best accompanies which protein, thank you very much. If you’re in the mood for Massaman curry, for instance, then you’d better be in the mood for braised goat neck. Other options on his interpretive Thai-inspired menu include duck laab salad with toasted rice, steamed pork meatball soup, and crispy pearl noodles with fried troutlings. House cocktails are similarly inventive: The ALN, named for Nosenzo, combines Farmer’s gin and Thai-pickle brine.
