Cecconi’s chef Andrea Cavaliere, who we spied last night at TOBH, is no stranger to the ol’ truffle shuffle. A native of Piedmont, the chef is expecting the first big shipment of white truffles to hit the restaurant next Wednesday. While we’d keep them all to ourselves and sniff them in a closet until the Intervention crew showed up, Cecconi’s will take points on the package, celebrating with a tableside preparation of pecorino risotto for two and promising a “generous heap” of shaved white truffles on top, all served in a hollow wheel of pecorino and served at market price.
