While cruising the long row of restaurants from Las Vegas’ forthcoming Cosmopolitan Hotel at the American Wine and Food Festival this past weekend, we spied a familiar face (and recognized the tatted forearms) cooking at chef Costas Spiliadis’s planned Greek restaurant, Estiatorio Milos. Chef Josh Smith, who recently left Church & State before popping up last week at Test Kitchen, was there helping prepare the team’s impressive sea salt-crusted Ionian lavraki. Smith confirmed that he has a new gig with the restaurant and will most likely be found working there upon its opening this winter. He’ll certainly be missed here, but fortunately is still within our reach. Just let us give you a word of advice, chef Smith, always bet on black!
