Todd Stein, the trifecta-hitting chef who currently runs the show at three restaurants at once (Cibo Matto, Roof, and State and Lake), is leaving his gig with The Wit hotel to helm The Florentine, reports Dish (in an email blast that’s not yet online). The Florentine — opening in October also in a hotel, the JW Marriott at 151 W. Adams — is the Chicago spot from the BLT Restaurant Group. It’ll be “a modern Italian restaurant in the vein of Cibo Matto,” says Stein, “a touch more rustic but still comfortable and hip.” [Dish]
