Mark Mendez isn’t the first Chicago chef to start a blog or even the first to write about what it is like to leave a restaurant (Phillip Foss beat him by a week), but that doesn’t make his latest venture any less interesting. The blog is called the The Cook & The Corkscrew and it features Mark and his wife Liz (who’s also a wine director) writing about the process of starting a new restaurant. Considering how stunning his post a few weeks ago about the process of leaving Carnivale was, it looks to be both informative and a good read. Check out the full press release below.

I’m writing to let you know about an exciting new blog that launched on Windy Citizen today: The Cook & The Corkscrew, written by former Carnivale executive chef Mark Mendez and his wife (and wine director), Liz. The two, who have years of experience in the Chicago food industry, will be documenting their journey in opening a new restaurant together, including practical details as well as personal reflections.
