Even the Owner Doesn’t Know What’s Next For the Khyber

Khyber owner Stephen Simons has a couple of ideas in mind for the next chapter of the former rock club. Aside from some basics of what the future might have in store now that the Old City institution has hosted its final live music performance, he’s not saying much. “We’re going to do more of a beer pub thing,” Simons told Grub Street. “Beyond that, I don’t have any other details.”

Simons, who owns the Royal Tavern, Cantina Los Caballitos and Cantina Dos Segundos with partner Dave Frank, expects to have a more formal plan in place over the next few weeks. He said that he and Frank and their chef, Mark McKinney, have been bouncing ideas off each other for some time, and have been actively pursuing another project. That project will now be reinventing the Khyber. ”Dave and I are discussing it with Mark, and we’re trying to figure out what we want to do.” When asked about concepts that the three have kicked around, Simons said, “Oh, I don’t want to talk about it until we’ve decided on what we’re doing.”
