Adsum, the neighborhood bistro from former Lacroix chef Matt Levin that Grub Street has been following for months, will open on Wednesday, July 14, according to a prepared statement. Levin’s partner in Adsum is entrepreneur and communications systems designer Kar Vivekananthan. Though Levin has stated in the past that he would not make menus available prior to opening, the statement includes highlights of some of Adsum’s noteworthy dishes, which range in price from $3 to $22. In addition to his menu of elevated bistro fare, Levin will offer a selection of imaginative snacks on a separate bar menu. Adsum’s bar manager Preston Eckman, formerly of APO Bar+Lounge, has developed a creative collection of cocktails to compliment the wine list assembled by Heather Rodkey, Adsum’s general manager. Adsum’s opening menu will include:
Grilled Rock Octopus with black pepper caramel.
Tater Tots, with whiskey, bacon, and green goddess dressing.
Sautéed Foie Gras with sour cherries and pistachio.
Wild Salmon with beet relish.
Short Ribs with bouchot mussels, brown butter Worcestershire.
Homemade Pierogies with burnt onions, thyme and smoked buttermilk.
Skate with fried broccoli, capers and Lillet-stewed apricots.
The cocktail list will include:
A View of Vieux Carre, rye, cognac, spiced red wine reduction, angostura and peychauds bitters.
Logical Consequence, gin, green tea, dill, fresh lime, honey and splash absinthe.
Elixir Classique, house made apricot liqueur, blonde aperitif, orange liqueur and rhubarb bitters.
Unholy Water, blanco tequila, smoked blackberry balsamic syrup, fresh lemon and house made ginger beer.
Poppy Doble, rum, maraschino, poppy seed, fresh lime, almond and fresh grapefruit.
Adsum will be open seven days a week from 4 p.m. until 2 a.m.; the kitchen will close at 1 a.m. nightly. Brunch service will be available on Saturdays and Sundays beginning on July 24.
