Polish-born Paul Lato produces an extremely limited quantity of his prized wines (less than 100 cases), which are available typically only through a mail-order list. With a pronounced passion for pinot noir, Lavato crafts 100% destemmed wines in an artisan tradition and specializes in grapes from Santa Maria vineyards. Lato will make a special appearance at Craft in Century City on Tuesday, July 27th for a winemaker’s dinner that will pair three pinots, two syrahs, and one chardonnay with a menu created around the wine by chef Anthony Zappola and pastry chef Shannon Swindle. The six courses include milk-fed veal paired with 2008 “Sine Cera” Fiddlestix pinot and a chocolate custard tart with plums and long pepper alongside a 2007 “Cinematique” Larner syrah. The price to party with Paul isn’t cheap, with reservations available at $175 before tax and gratuity, available directly with Anna Morini at 424-204-7485. See the full menu for Paul Lato’s winemaker’s dinner at Craft below.
