Jo’s Won’t Replace Fired Executive Chef

Chef Colin Kruzic was fired on Sunday as executive chef of Jo’s, he told Grub Street in an e-mail. Co-owner Johnny Santiago confirmed that Kruzic was fired, but declined to specify why. According to Kruzic, his departure was the result of a “continuing disagreement of the direction of the business and the delegation of responsibility there.” (Kruzic was hired as executive chef in January.) Santiago and partner Jimmy Chu have no immediate plans to replace Kruzic. “The vision of the restaurant — fun dishes like meat in a cup — we’re taking much more control of that process and working with a team of chefs as more of a collaboration,” Santiago said. “I still hope they succeed,” Kruzic wrote. He plans to announce a new project within a few months.
