Crispy Pata Is ‘Not for the Faint of Heart’

The rustic — some might say too rustic — Filipino dish known as crispy pata is, as Adobo Nation reminds us, “an in-your-face reminder of where your food comes from.” It’s basically a whole braised, marinated, and fried pig trotter — leg, foot, and all. As this video teaches us, via Boracay Garden and Grill in South San Francisco, the front legs of the pig are meatier than the back legs, making for tastier pata, and you want to make sure to use the foot because all the “ligaments and stuff” down there are the best part, according to chef Harold Castillo.
