Everyone’s favorite fast-casual Indian lunch spot in the South Loop is getting ready to franchise. Chutney Joe’s has been a fixture on South State Street since it opened in February of 2009, and now it is looking to slowly expand. Founder Vijay Puniani told Nation’s Restaurant News that the chain hopes to start five to ten new restaurants by the end of the year, and 30 to 40 next year. The chain is looking to capture the rising interest in Indian food across the country. Talking to NRN, Puniani said, “Our focus will be to make Indian food more and more popular and more available to average Joes, even in small and midsize towns.” [NRN]
