Following a soft-opening last week for friends, family, and assorted cronies, Capital Grille opens its first California location today at Beverly Center. A steakhouse in the traditional wood and leather vein, Capital Grille has a curve of a bar over a checkerboard floor, oil portraits of famous locals, two dining rooms in mahogany, and an aged look of some sophistication, despite its infancy. This is Capital’s 42nd location, following a national spread that finds it mostly along the East Coast. What’s the restaurant famous for serving?
Capital Grille is regarded for aging its own steaks on site and a 5,000-bottle strong wine selection, overseen here by sommelier George Miliotes. Meanwhile chef Dana Dare will be overseeing the rubbing of Delmonicos with porcini and keeping the sirloins crusted a la Kona. With a great location and the mall’s built-in audience for higher quality chains, plus the kind of stick-to-your-table service seen at other corporate steakhouses like Ruth’s Chris, the chances for success at this new import are high.
