Following a soft-opening last week for friends, family, and assorted cronies, Capital Grille opens its first California location today at Beverly Center. A steakhouse in the traditional wood and leather vein, Capital Grille has a curve of a bar over a checkerboard floor, oil portraits of famous locals, two dining rooms in mahogany, and an aged look of some sophistication, despite its infancy. Capital Grille is regarded for aging its own steaks on site and a 5,000-bottle strong wine selection, overseen here by sommelier George Miliotes. Meanwhile chef Dana Dare will be overseeing the rubbing of Delmonicos with porcini and keeping the sirloins crusted a la Kona. With a great location and the mall’s built-in audience for higher quality chains, plus the kind of stick-to-your-table service seen at other corporate steakhouses like Ruth’s Chris, the chances for success at this new import are high.
