A gourmet waffle shop of many strange toppings is coming to the former site of Santa Monica’s Cafe Paraiso on Wilshire, west of 26th Street. The store, named Bru’s Wiffle, is the passion project of a woman named Bru, a native of Turkey who tells us she’s been on the management side of the restaurant business for years. Bru promises to re-invent the waffle, and an online menu proves she’s not above taking risks to get there. What’s making the menu?
It currently shows photos of everything from a classic dessert Belgian to pizza waffles, chicken curry waffles, and even meatball marinara-stuffed waffles. WTF? Where’s the pork belly and kim chi waffle, lady? Anyway, this sounds a little like a food truck concept that’s skipped the wheels and landed in the brick-and-mortar stage. But L.A. will have a chance to judge these wiffles, or waffles, or whatever they are, in late September when an opening is expected. Until then, track the progress on Twitter.
