Tonkotsu Ramen Joint Hidechan Opens Friday

The hot weather may not put you in the mood for a bowl of noodles in steaming pig-bone broth, but true rameniacs will be crowding the new Hidechan on Friday. The noodle joint opening in the former Yakitori Torys space specializes in tonkotsu, a creamy, dense broth. Hidechan is named for Hideto Kawahara, the chef behind sibling restaurant Totto Ramen. Kawahara hails from the Hakata area of Japan, the same region where Ippudo originated. As of Friday, Hidechan will be open daily from 6 p.m. to midnight. Lunch service begins July 1. The restaurant has a liquor license and, one hopes, AC.
