Bruce Binn and Neil Jorgenson, the men behind Spork, have a new venture making its soft-opening debut this week on Mint Plaza, right next to Chez Papa Resto: Thermidor. As Tablehopper reports today, the décor is very 60s-inspired, with Scolari chrome chandeliers and servers in skinny ties.

The namesake lobster thermidor isn’t yet available, but opening menu items include house chips with smoked trout, roe, crème fraîche, and shallots; celery Victor; sole almondine with fresh gnocchi, and sweet yellow corn; and a grilled Berkshire pork loin with potato puré and wilted watercress. The bar program, created by Brooke Arthur (Range, Prospect) similarly includes updates on mid-century classics like the Harvey Wallbanger.
