The latest in Mike Gebert’s Sky Full of Bacon video series, delves into the complex issue of whether it is possible to feed everyone on local and organic ingredients. Basically: “How do you change a system that feeds 300 million Americans and still feed 300 million Americans.” Gebert approaches the issue by examining the issue through one of the biggest restaurants in the city, Carnivale. (Former) Chef Mark Mendez wants to use as much local product as he can, but has issues with getting enough to satisfy the incredible demands on the restaurant every night. Gebert than heads out to Kinnikinnick Farm to talk with David Cleverdon about the issues involved with producing such vast quantities of food for restaurants in the city. It’s a smart video, which is definitely worth a look. Plus you get to catch a last look at Chef Mark Mendez while he was still at Carnivale.
