Boston’s burgeoning food truck scene will get a new player on Friday night when food truck Fillbelly’s launches, per Thrillist. The truck will offer soul food: think spicy fried chicken with coconut waffles, homestyle empanadas called bosilitos, and mac and cheese, which comes both on its own and baked into a casserole with collard greens and shredded cinnamon sweet potatoes. Fillbelly’s will roll around Jamaica Plain, Roslindale, Hyde Park, South Boston, and the Fenway starting at 9 p.m. nightly and will announce locations via its inevitable Twitter feed.
