Should Bartenders Be Just As Fast As Servers?

Michael Bauer responds to a bartending reader today regarding the responsibility of a bartender at a high-end cocktail bar which also offers food service. The bartender finds that some of his dining patrons get impatient with him, “Whether it’s trying to hand me a credit card while chewing the last bite, or asking for a menu before sitting down,” all while he’s trying to mix some complicated drinks. Bauer’s take on this issue is fair: If you’re eating at the bar, you can’t expect the same level of attention and service as at a table. A bartender has way too many people to keep happy at one time, including servers.
