Corey Lee Explains the Name of His Upcoming Restaurant Benu

French Laundry alum Corey Lee will be opening his first solo venture Benu (22 Hawthorne Lane) come July or August. Today he explains the name to the Scoop, which Lee credits his sister for finding and says he couldn’t find a translation for it at first. “It’s actually an Egyptian word and it stands for the phoenix,” he says, “a symbol of something constantly renewing.” We like it a whole lot better than his original name, Ensemble, and it makes for a much prettier logo too.

Still no word on the menu, but Lee says his food will feature some more modern techniques that he didn’t feel were appropriate to use during his French Laundry days. “More traditional technique is certainly Thomas’ view… But there are also techniques that really showcase a product and there are techniques that just showcase a technique, and I think the former is more the French Laundry style and in many ways, it’s my style.”
