Oh boy, oh boy. The Feed has a look inside Totto’s new ramen shop, which we’re told opens next Wednesday at 366 West 52nd Street, near Ninth Avenue. Chef Hideto Kawahara, who owns several Japanese ramen shops, is offering the options of miso, paitan, and shoyu broth, and later in the summer, a tonkotsu broth operation will open as well. But will chefs dig it as much as they love Yakitori Totto?
