Thanks to increased demand for local meat and subsequently increased livestock numbers, small farmers have been complaining about a lack of slaughterhouses. Enter the Modular Harvest System, a euphemistically-named portable abbatoir that Christine Muhlke checks out in this weekend’s New York Times Magazine. The killroom-on-wheels is currently making the rounds of New York state farmers, but it’s only a matter of time before a critical mass of meat obsessives agitates for it to make a stop in Brooklyn.
