Umami Burger impresario Adam Fleischman is starting a new concept involved with a new concept called Red Medicine, due for the now-shuttered space of Hokusai in Beverly Hills, reports Eater. The restaurant plans to serve French-Vietnamese fare under Jordan Kahn, the celebrated pastry chef from XIV who will assume the role of exec chef here (Kahn is a co-owner who conceptualized Red Medicine with partner Noah Ellis, who he met while working for The Mina Group). The duo is carefully constructing a menu and beverage program based around the things they do best, telling Grub Street that attentive service will be a central point to provide a great overall experience. Red Medicine’s food will mostly be served family-style, broken down into sections like “cold,” “protein,” and “veg.”
If you remember the incredible, edible murderous mess of sugar Kahn scored honors with at the Rising Stars gala, then you have a taste of the chef’s vision, but here he’ll likely eschew splattered blue fluids to make banh mi buns from scratch, as well as slow roasted pork butt with grilled rice cakes, spring rolls with smoked bacon, Jidori chicken braised in Vietnamese caramel, and pan-roasted Diver sea scallops with young ginger and pomelo, among the showers of other South Asian spices that grace the plates.
In the drinks department is another Michael Mina vet, Noah Ellis, head bartender for all seventeen Mina joints. Ellis will create a menu of seasonal cocktails based on the European and U.S. tradition with a lighter feel to compliment the food and everything made in-house including a huge selection of non-alkie drinks like kaffir lime-aide, Thai Red Bull, and five-spice horchata.
So if you’ve been bitching about Crustacean all these years, this just might be a refreshing Indochine answer, especially with the tease that a pho bar could be next. Red Medicine ambitiously plans to open on July 10th, but we’ll let you know if that proves realistic.
