When Harvard Square’s Hotel Veritas opens at 1 Remington Street, it will bring with it Simple Truth Lounge, an intimate 16-seat spot. Simple Truth will serve a selection of charcuterie and cheeses from Formaggio Kitchen, GM Benson Willis tells Grub Street. A carefully edited beer list will skew local, while the wine selection is internationally focused. Here’s the exciting part: all of Simple Truth’s vodka, rum, and gin cocktails will be made with booze from Berkshire Mountain distillers. Simple Truth is set to open next month.
