Shea Gallante Is Waiting Things Out in Port Chester

Restaurant North isn’t the only instance of Manhattan big-ups leaving the city — perhaps Gotham’s most desirable free agent, Shea Gallante (who left Cru and then left David Bouley) has landed in Port Chester and will open an Italian restaurant with Godfrey Polistina of Ouest and ’Cesca in June. The chef tells Feast that with Manhattan rents still up and numbers low, it’s the right time to do something in a town where “nobody’s going to compete with Mario Batali,” but he also assures, “We are waiting for the right opportunity to present itself to open sometime in ‘11. When I do open a place in NYC again, I will be an owner, true to the title, and not just an employee.”
