Because all street food vendors are potential food stars now (see Roy Choi’s recent Food & Wine honor), we feel we should call your attention to this interview by California Taco Trucks with Emeryville-based asador Javier Sandes. Grub Street previously noted the excitement outside the Pixar gates over Sandes’ Primo’s Parrilla truck, and now he goes into some detail about his carving and grilling technique, the origins of the name Primo’s, and where the truck may rove next once he gets permits.
