Pie Boy Pizzeria Opens Downtown

Big things are planned at Downtown’s Pershing Square Building, where former Nick and Stef’s exec chef Brian Kiepler just opened Pie Boy Pizzeria with Doug Rausenberger, a former manager at Border Grill. BlogDowntown reports the two are serving pizza, with the dough made in-house and a choice of three sauces, as well as dishes from baked garlic chicken and hot wings to pressed “pie-ninis.” Rausenberger takes a dig at the previous Kosher-pizza maker tenant, “People want pepperoni on their pizza…Pepperoni just isn’t Kosher.” But that’s not all the duo has in store here.

With building owner Jeffrey Fish, the team plans a rooftop restaurant that runs through the top three floors of Pershing Square with help from designer Alexis Roworth. The food will cover a wide range of influences, and include affordable small plates, stressing sustainable market ingredients and area ranches. Details are scant, but the ground floor will have a restaurant, and a basement bar or jazz club are also being considered. The revitalization of this near-centurion building is a boost to the neighborhood and the city’s history.
