Mario Batali Is Greener Than You

The Huffington Post’s newly launched food section features a behind-the-scenes look at the ways the Batali-Bastianich Hospitality Group promotes sustainability at their various restaurants. “We have banned bottled water,” writes Elizabeth Meltz, the hospitality group’s director of food safety and sustainability. “We have a full scale recycling and composting program at each of [our restaurants] and all of our chefs have personal relationships with the local farmers.” When there’s no local farmer to buddy up with (as is the case, we presume, with the group’s Las Vegas ventures), they achieve virtuousness nevertheless. At Carnevino, she says, “we have introduced water saving measures, recycled paper and toilet paper, energy conservation initiatives, recycling and composting.” [HuffPo]
