Yesterday we declared tacos the new, hot trend to hate, and right on cue the good folks at L2O get all “oh yeah? Check this out” over on their blog with a “tuna taccito” (pronounced, we believe, like taquito): “a dish with deep and bold flavors that you can only like.”

The teensy-weensy translucent taco shell is made from set corn and pasilla chili bouillon, which is then filled with chopped tuna in an ancho emulsion, cucumber, freeze-dried corn, and an avocado-spiked salsa verde. Pair this baby — which is available as part of L2O’s tasting menu, and of which Laurent Gras says “if it is not yet a classic on our menu, it is on the way to becoming one” — with Alinea’s 2D-3D burrito and you’ve got a serious molecular gastronomy fiesta.
