Aquavit Names Marcus Jernmark Executive Chef

Almost a year ago, the Feedbag floated a rumor about Aquavit’s imminent demise. Owner Håkan Swahn laughed it off, and here we are today, with the Feedbag gone and Aquavit still standing (though more than ever, partner Marcus Samuelsson is off doing other things). Now, a change in the empire: Florence Fabricant, a day after launching her new Ask FloFab column, reports that Marcus Jernmark, a 28-year-old Swede, has been promoted from executive sous-chef to executive chef: “Mr. Jernmark’s menu for the main dining room offers dishes like venison tartare, a Swedish steamed vegetable dish called angamat, seared arctic char with cauliflower puree and nettles, and duck breast roulade with potato dumplings and lingonberry jus.”
