What to Eat at Dos Diablos, Opening Soon in River North

River North’s apparent dream of becoming Taco Valley becomes more of a reality next month, as Dos Diablos prepares to open its doors in early April. The cantina-style Mexican menu doesn’t hold too many surprises — co-owners Marc Bortz, Todd Rubin, and John Merlo aren’t pushing a name chef in the kitchen, so they’re sagely sticking to a basic diner-friendly menu of combo platters, fajitas, and taco salads. Shameless reward for gluttony alert: Eat the “Big Mel” — a 3.5-pound chimichanga of which the menu warns “this is NOT a healthy dish” — in 20 minutes or less, and it’s free. (Though prices have yet to be determiend, so your savings/personal dignity ratio is yet to be determined.)
