Former Atwood Cafe chef Heather Terhune gave us a hint recently of what we could expect to see on the menu of her soon-to-open River North restaurant Sable, in the Hotel Palomar. Root beer-glazed bison sliders, American flatbreads, butterscotch pot de creme — it’s all there on the pre-opening menu that TOC procured. Also notable on the haute-comfort menu: sweet creamed corn crème brulee, spicy buttermilk fried quail with blue cheese slaw, and a very BLT-esque appetizer of crispy pork belly with lettuce and tomato.
