Saby’s Coffee and Juice Bar, the Mar Vista Mexican eatery that doesn’t much resemble one from the outside, has started a kitchen expansion that will soon lead to a bigger selection of dishes. The construction of a new kitchen is currently underway under chef Mario Curiel, from Nikki’s in Venice, who is beefing-up the menu with asada and shrimp plates, as well as mulitas and a taco selection, joining the spot’s refreshments like smoothies and aguas frescas made from real fruits. Tortillas are made in house and only fresh ingredients are to be used in the expanded kitchen. Fruit and ingredients are displayed in front so you know you’re eating real food. It takes a little longer these days, but the result is clean and healthier Mexican food still full of flavor. Look for the bigger Saby’s towards the end of the month.
