Xoco Launches Mexican Soft-Serve; World Never to Be the Same

Basically the entire world stopped spinning on its axis last night, when Rick Bayless tweeted the announcement that Xoco will now be serving “homemade Mexican vanilla soft-serve,” with two topping options: chile pasilla brownie bits with chocolate sauce, or maple-pecan-bacon-streusel with salted caramel sauce (picture here). Both options run a reasonable $4.25, with the option to get just a cup of plain soft-serve “for dipping your churros” for two bucks.

Taking a big-picture view, this means two things: first, soft-serve, as a trend, is here to stay, and it’s only going to get bigger — you’ll recall that Graham Elliot Bowles is planning on serving it at the coming-sometime-in-the-future Grahamwich, and now that it has the Bayless seal of approval we’re pretty sure it’ll pop up everywhere. Second, we’re pretty sure Belly Shack’s Bill Kim, who pulled the whole “soft serve topped with bacon” thing a full three months ago, is seething right about now. [@Rick_Bayless]
