Starting this spring, Boston’s long citywide pommes frites-less nightmare will finally be over when Saus (pronounced “sowss”) opens its doors. “We’re just waiting on a building permit,” says owner Renee Eliah, who we contacted after reading about Saus on WhereToEat.in. Once opened, Saus will offer traditional Belgian style pommes frites with sauces like barbecue and cheddar beer in addition to the traditional mayonnaise-based options.
The menu will also include Belgian waffles in the Liege style, which features sugar bubbles in the waffle. Renee and co-owners Chin Kuo and Tanya Kropinicki have brought on Shira Melen of Aroa Fine Chocolates and Flour’s Corey Johnson as consulting chefs. Johnson’s also done time at Portland’s legendary Duck Fat, so the man knows his Belgian frites. Saus will be right next to Paddy O’s and will be open until 2 a.m. on weekends and midnight the rest of the week.
