Scott Conant’s Faustina Will Open February 5

The Times looks at quick reboots, like Craftsteak to Colicchio & Sons and Center Cut to Eds Chowder Bar, and reveals that Scott Conants Table 8 redo will be called Faustina and open February 5 with a conspicuously informal tone. Among the dishes Conant worked on during late nights at Scarpetta: Olive-oil-poached sardines, veal porterhouse steaks and tajarin pasta with tomato and sea urchin (which Mr. Conant described as sex in a bowl). Also of note: Colicchio spent about $400,000 remodeling Craftsteak.
