First Look at Recette, a Private Dining Room Going Public Tomorrow

After closing the private restaurant they operated out of a Harlem bakery, former Gordon Ramsay chef de partie Jesse Schenker and ex-Per Se pastry chef de cuisine Christina Lee are reopening Recette tomorrow. The second coming will be as a proper restaurant in the former home of Jarnac, with Yun Ko (formerly of Gramercy Tavern and bygone Fleur de Sel) now onboard as general manager and wine director.

Whereas Recette’s old menu changed to suit the occasion, and consisted of pricey 5-to-20-course tastings, the new menu of what Schenker calls “contemporary American food with French technique” is split up into snacks (“to get your mouth popping”) and plates, all of them under $20. The plates consist of “generous tasting portions” — and if you want them as generous as possible, your safest bet is the half poussin and the two-ounce foie gras torchon. Those who dined at Recette back in the Harlem days will recognize the pork belly braised in sherry caramel — and Schenker has also added new dishes such as a fluke tartare with a caviar sabayon.
