Bouley: BrushStroke Will Open in Early July

It’s been a while since we heard about BrushStroke, the Kaiseki restaurant David Bouley was originally going to open at 111 West Broadway before he decided to install it in the space that housed Danube and then Secession (you’ll recall his landlord at 111 West Broadway sued him for non-payment of rent). But after attending a cooking demo with Bouley, Forays of a Finance Foodie discovers that the restaurant will open in early July. It’s uncertain whether these dishes will make the menu, but for the record, Bouley prepared Japanese sea scallop, Alaskan Dungeness crab and mountain-yam dumpling; housemade tofu; yuzu gelée, ponzu gelée; and black-truffle dashi sauce.
