Suaya Plans Peruvian-Japanese Fusion at Hollywood’s Osaka

We’ve heard tell of the pitfalls arising from assumption, but we figured Adolfo Suaya’s forthcoming Osaka was going to be Japanese-centered anyway. Not so, the Boho co-owner explains to Eater, excited to get back into restaurants after selling Bar Delux. While his Surly Goat is on-track to soon deliver quality beer to West Hollywood, where he offers “it is non-existent,” Suaya says he has intentionally pushed Osaka back until the forthcoming W Hotel Hollywood settles in its shoes. Osaka will be a “completely new concept” (tell that to the owner of Lomo Arigato, for one) that fuses Japanese and Peruvian eats in one central dining room, a Peruvian ceviche bar in another room, and will have a “heavily landscaped” patio with a Pisco bar dedicated to cocktails, which (surprise surprise!) will figure prominently. Any predictions for the next item one of our famous owners will bring us that we’re not doing right somewhere?
