Food & Wine’s January issue features a requisite 2010 trend report, and kudos to the editors for picking some offbeat categories. Among them: artisanal breakfast ingredients, chefs fetishizing butter, fancy takeout containers (see: MacBar), food tours of Latin America, and higher-quality frozen hors d’oeuvres. Like trends compiled by Epicurious and Restaurants & Institutions, Food & Wine expects an uptick in sustainability and highbrow fast food via farm dinners and hot-dog spots like Bark. Sick of predictions? In another feature, Frank Bruni accounts how he terrorized Le Bernardin sommelier Aldo Sohm by pretending to be extra picky about wine.
