What to Eat

Cary Taylor’s Deconstructed Thanksgiving Homage

Injecting a little postmodern hoopla into Chaise Lounge’s more, let’s say conventional menu, chef Cary Taylor is doing a deconstructed Thanksgiving dinner, available now through the holiday: Taylor takes the meat from a deboned turkey, forms it into a cylinder, and slices it out into rounds. Crisp-fried slices of the turkey are plated with a swoop of cranberry “paint,” green beans tossed with a creamy turkey sauce, and a cornbread pudding. It’s certainly not mom’s home cooking. Unless you have a pretty kickass mom. [RIA]
