What to Eat at The Collection, Grand Open in Malibu

The Collection grand opened this week at Malibu Country Inn, not long after replacing The Hideaway Cafe and soft opening to rework its menu and space this summer. Similar to the neighborhood’s revitalized Sunset, the restaurant felt its sea and hillside views were better appreciated than its eats, so new management stepped in to give it a fresh coat of paint, new chefs, and new food. In the kitchen now is Antonio Rosa, who cooked at The Regency Club and as Jack Nicholson’s personal chef, Doublas Soriano, a chef at The Peninsula Hotel and both locations of The Farm of Beverly Hills, and Isabella Sarengetti, also from the personal chef circuit.

There’s a burger on a baguette, salmon tartare with wasabi caviar, Soriano’s signature black truffle mac n’ cheese, and plenty of surf n’ turf and pasta plates. In the works for the months ahead is a new rooftop martini bar to pair with evening sunsets and the bar’s various rose-flavored martinis.
