Chef de cuisine Anthony Zappola and pastry chef Shannon Swindle are collaborating to bring ever-morphing, market-driven dinner menus to Craft that a restaurant rep promises will involve breaking down whole animals (where’s Charlie Palmer and his gun when Tom Colicchio really needs them?). Starting this week, the $55 per person prix-fixe will be available on the borders of the regular menu and served family-style, meaning your whole crew must commit to it. Craft already enjoys a healthy relationship with the folks from local farms and ranches, so it will be a kick to watch Zappola go nuts with large portions of fresh greens, entire animals, and a new-found sense of freedom.
