AKA Bistro to Bring Pedigreed Dining to Lincoln [Updated]

Uni chef Chris Chung and Clio GM Christian Touche will open AKA Bistro, a combination French bistro and sashimi bar in Lincoln next year, reports the Lincoln Journal. A combination French bistro and sashimi bar? That sounds an awful lot like a combination of Ken Oringer’s Clio and Uni. Though Chung and Touche are striving for, as Touche puts it, “very casual, not upscale” atmosphere (i.e. basically the opposite of Clio and Uni), the similarities are striking. While Oringer declined to comment for this story, his spokesperson Chris Lyons tells us that “This is something we know that Chris was planning. Ever since he came back, he’s been very up front about wanting to have his own thing.” Chung and Touche will remain at their current jobs until January. AKA Bistro is slated to open in March.

Update: Oringer writes in to emphasize his enthusiasm for AKA Bistro: “Nothing makes me prouder than having my right hand man and friend open his own restaurant, especially with Chris, another person who has trained with me for five years. They will both do very well, and I will help them with any advice they need.”
