David Posey, Blackbird’s New Sous Chef

There’s a new sous in town: last night, former Blackbird commis David Posey took his first turn as the restaurant’s sous chef. Posey, a 25-year-old CIA grad, has replaced former sous Ivy King, who left a few weeks ago for a gig in Indianapolis. Though he’s been working in the Blackbird kitchen for two years, Posey is a former Achatz protege (he worked under The Ginger One at both Trio and Alinea). Of his new right hand man’s first dinner rush, Blackbird chef de cuisine Mike Sheerin twittered: “102 on a monday…Working on new dishes and no one died….successful first day I’d say.” We’d say, too.
