Good news for people who take eating hot dogs seriously, as opposed to those who just shovel the things in their mouths as if they were training for Nathan’s Fourth of July feed-a-thon: This week’s magazine reports on the August 12 opening of Bark Hot Dogs, a thinking man’s wiener shop run by two frankfurter fanatics, Joshua Sharkey (formerly of Café Gray) and Brandon Gillis (an ex-Franny’s man). “We’re taking the same approach chefs take to high-end cuisine and applying it to something simple, approachable, and affordable,” Sharkey says. So put down that dirty-water dog, and feast your eyes on our slideshow and the slightly pork-obsessed preview menu. If you’re like us, come next Wednesday you might find yourself fighting the urge to chase a griddled hot dog basted in smoked lard butter with a Crispy Pork Sandwich (brined, braised, and deep-fried belly, shoulder, and jowl meat on Blue Ribbon flatbread).
