A little over two months after confirming that opening chef Claudio Cristofoli was out of the picture at Da Silvano sister restaurant Scuderia, Leyla Marchetto now tells us the name of its new chef, Carlo Apolloni. Before this, the Sicily native cooked at Osteria del Circo, the Four Seasons Hotel, and Le Cirque at the Bellagio in Vegas. Apolloni has been in the kitchen long enough to add a suckling pig from Schiller’s Family Farm and a pork-belly sandwich. He’s also been doing specials such as soft-shell crabs, grilled branzino, and spaghetti with clams. Here’s a look at Scuderia’s current menu.
