In yet another publicity coup for Surf Lodge in the Hamptons, Sam Talbot showed up on Late Night With Jimmy Fallon last night to demo his seared scallops with pickled watermelon and cheese, a dish he says he’ll also be serving at the new Mondrian in Soho. You’ll recall Flo Fab cast some doubt as to whether Talbot would stick to the project back when it was slated for late this year (per Fallon, it’s now opening next year), but this would seem to make it a lock. Talbot says the restaurant in the 300-room hotel will serve all locally sourced seafood. Hopefully not too locally sourced.
