Eastern Standard and Sofra Could Expand

Eastern Standard is looking to expand, according to a StarChefs interview with mixologist Jackson Cannon. “We’re looking for property all the time. Our restaurant is thriving in the downturn. … We’re looking at a lot of different properties and the owner, and the chef and I are excited to have some other expressions that are differentiated from Eastern Standard.” Cannon also thinks we should be drinking more grain alcohol. He’s a “little tired” of flavored vodkas and offers the restaurant’s own grapefruit peel essence, made with grain alcohol, as an example of an innovative way to mix spirits. In the same StarChefs newsletter, Maura Kilpatrick mentions that she hasn’t ruled out more locations for Sofra, admitting “it would definitely translate into more than one place. It’s very original and has been very well received, and people are asking us that already.”
