Stephanie Izard Has Already Started Making Charcuterie for the Drunken Goat

While Chicago gets ready for the Taste to land in our front yard, Stephanie Izard is busy up in Aspen, hanging out with other chefs and fellow ex-Top Cheftestants. The folks at YumSugar caught up with her for a video interview, in which Izard spills about her long-awaited restaurant, The Drunken Goat, slated to open in January in a West Loop space on Randolph and Halsted. Among other things, Izard reveals that the restaurant will have a serious focus on cured meats: it’ll be “a big charcuterie program — I’m actually starting to work on that now to get things ready for January,” she tells YumSugar. “We’re getting in, you know, whole animals - goats, of course - and it’s all sustainable, local. I just wanted to make it myself - I’m going to be there all the time, so [I wanted to make] a place that I want to hang out all the time.” Cured goat meat and Izard actually in the kitchen?
