Danny Meyer’s Union Square Hospitality Group has announced that Gramercy Tavern’s executive sous-chef, Nick Anderer, will be the man in charge of the kitchen at his project in the Gramercy Park Hotel. Before moving to Gramercy Tavern six years ago (when Tom Colicchio was chef), Anderer worked with Mario Batali at Babbo (you may remember his name from Bill Buford’s Heat). The move isn’t surprising — last year, Grub Street singled out Anderer as a chef to watch, and Meyer has told press he’s opening the restaurant partly to promote someone from within. Terry Coughlin, currently the general manager of Tabla, will be the GM at the restaurant, which will open in the fall.
